What's New - Autumn Harvest - Winter Treat

Harvesting is a busy time, where recipe development and crop quality are considered in preparation for storage and bottling of home grown fruits and vegetables at Paramata. When guest season slows, the making of purees, pickles, sauces, and jams hots up in the kitchen.

The bell peppers were a late crop, so blended with some chilli peppers our first tabasco sauce has been bottled. The second variation is currently fermenting, thanks to Hana, my cousin, who introduced a traditional Czech technique when she stayed recently. A delicious condiment to the winter pumpkin soups!

En route from the ski fields in Queenstown or Wanaka heading north, try a one or two night stopover at Paramata Lodge. You're sure to enjoy the experience!
